Teff banana pancakes vegan

This vegan sports nutrition recipe is simply one of the easiest ever. Teff flour is incredibly nutritious, because it is rich in minerals such as calcium and iron, and it is suitable for people with celiac disease. This recipe contains four ingredients and the pancakes are very tasty both hot and cold!

For 1 person, preparation time 15 minutes

Ingredients:

  • 75 grams of teff flour
  • 150 ml vegetable drink
  • 1 tsp baking powder
  • 1/2 tsp Chinese five spice powder
  • 1 tbsp oil for frying
  • 1 tbsp hummus
  • 1/2 avocado

Preparation method:

  1. Mix all ingredients in a bowl well with a whisk, until it is an even mixture (without lumps).
  2. Heat a frying pan and put in an ini-mini dash of oil.
  3. Put a ladle of batter in the pan. Note: these will be small pancakes, you don't have to spread the mixture all over the pan.
  4. Turn the pancakes over as soon as the top has small 'holes'.
  5. Stack the pancakes, add a dollop of hummus and slices of avo. Enjoy!

Nutritional value per person: 641 kcal, 55 grams of carbohydrates, 17.5 grams of protein, 37.5 grams of fat, of which 4.6 grams are saturated, 0.39 grams of salt and 11.8 grams of fiber.
