 A tasty and healthy muffin based on spelled flour, oatmeal, quark, eggs and fruit. With this muffin you provide proteins, carbohydrates, fiber and vitamins.

You can have this muffin for breakfast, lunch or eat it as a healthy snack. Handy to take with you in the lunch box. If you want to make them milk-free/lactose-free, choose coconut yogurt and vegetable butter.

You can make these muffins super fast using a blender. This way, you can have twenty healthy and tasty muffins for home, work, school, at the picnic in no time at all.

IS BUTTER HEALTHY?

I prefer to bake the muffins with butter. Butter contains vitamins A, D and E. If you use it in moderation, it is healthy. Did you know that in a healthy diet, ten percent of your diet may consist of saturated fat? In these muffins, the saturated fat is just under ten percent.

Saturated fats such as coconut oil and butter are honest, unprocessed foods that do benefit our health. Butter even contains butyric acid, a substance that serves as food for our gut bacteria: the organisms to which we owe our total health.

INGREDIENTS 20 PIECES

1 banana
80 grams of butter
2 tablespoons of jam
1 tablespoon of cane sugar
2 eggs
150 grams of quark
1 apple
200 grams of whole wheat spelled flour
75 grams of oatmeal
8 grams of baking powder
250 grams of blueberries (can easily be frozen)

PREPARATION

Melt the butter. Peel the banana and the apple and cut them into pieces. Blend the melted butter with the banana, apple, cottage cheese, jam, sugar and eggs. Add spelled flour, oatmeal and baking powder and beat this lightly through the batter. Now fold the blueberries through the batter. Spoon the batter into a greased muffin tin or paper cupcake cases. Bake the muffins in the oven at 200 degrees for 25 minutes.
